Chimichurri Chicken Breast + Hand-Cut Oven Fries


3 Russet Potatoes
Fresh Zucchini
Chimichurri Sauce
Boneless, Skinless Chicken Breasts

Place rack in top third of oven, add sheet pan + preheat oven to 475°; peel (or don't peel!) 3 potatoes, cut into ½-inch sticks, mix with 2 tbsp oil + salt/pep; carefully remove hot pan from oven, spread fries onto pan + bake 15 min; flip fries over, reduce heat to 425° + bake 10-15 min more until golden
Heat 1 tbsp oil in skillet over med-high; pat chicken dry, season with salt/pep + cook 4-6 min per side until fully cooked, no pinkness remains
Wash zucchini, then slice on the diagonal into 1/2-inch pieces; heat 1 tbsp oil in skillet over med-high, add to pan, season with salt/pep + sauté 3-4 min until tender
Divide all to plates + drizzle 1-2 tbsp chimichurri onto each fillet
