1 cup golden raisins
1 ⅓ cup water,hot
2 tablespoon canola oil or olive
3 cups onion, diced
4 cloves garlic, minced
Salt
Pepper
4 teaspoon chili powder
4 tablespoon tomato paste
2 x 15 oz Black beans, drained and rinsed
1 ⅓ cups green olives, sliced
1 cup frozen corn, fresh or thawed
4 tablespoon cilantro, chopped
cooked rice
Cook rice according to package directions.
In a small bowl, combine raisins and the hot water. Let soak.
Meanwhile, heat the oil in a large skillet and then cook the onions, garlic, salt and pepper together for about 3 minutes. Add Chili powder and Tomato paste, and cook, stirring for another 3 minutes.
Stir in corn, Beans, Cilantro and the raisins with their soaking liquid. Simmer for 5 minutes.
Serve over rice.
