Coconut Curry Chicken + 7-Veggie Stir-Fry

 



Hungryroot Coconut Curry Sauce
2 pkg. Seven Veggie Stir-Fry
Seasoned Grilled Chicken Breast

Heat 1 tbsp oil in skillet over med-high, pat chicken breasts dry + warm 1-2 min per side; slice + set aside

Heat 2 tbsp oil in 12-inch skillet or large pot over high; sauté 2 packages of stir-fry veggies + salt/pep 3-4 min then add ¼ cup water, reduce heat, cover + cook 2-3 more min until tender

Turn off heat, add chicken back in + mix it all with curry; once combined.
