Wipe mushrooms with a damp paper towel, remove stems + scoop out gills; thinly slice, heat 1 tbsp oil in a skillet over med-high + sauté 3-4 min until tender; add salt/pep

Heat 1-2 tsp oil in a large skillet over med-high, add patties, season generously with salt/pep + cook undisturbed until bottoms brown, about 2 min; flip patties over + cook 2-4 min until cooked through; add a slice of cheese to burgers, cover + set aside

Toast 4 buns until warm + golden

Assemble burgers + divide between plates; assemble the cheeseburgers with mushrooms + divide between additional plates
