Sesame Noodles W/Chicken & Snow Peas

 

  • 12  ounces, fluid thin noodles whole grain or thin spaghetti, cooked & drained
  • 3  boneless chicken breasts, cubed
  • 1 cup snow peas
  • 1/4  cup soy sauce
  • 2  tablespoon sugar
  • 4  cloves garlic, minced
  • 2  tablespoons rice vinegar
  • 3 tablespoons pure sesame oil
  • ½  teaspoons hot chili oil or red pepper flakes
  • 4 tablespoons canola oil
  • 2 whole green onions, sliced thin

  1. Start the noodles in a pot of boiling water. Cook until al dente.
  2. While the noodles are cooking in a small bowl whisk together; soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil and canola oil together and set aside.
  3. Taste and adjust the ingredients as needed. I cut down the sesame oil by one teaspoon. While the noodles are cooking, saute the chicken pieces.
  4. I tossed the chicken in a bit of stir fry sauce before cooking, but you can leave it plain. When the chicken is cooked through add the snow peas and cook for an additional 3 - 5 minutes.
  5. Drain the noodles and add to the chicken and snow peas. Pour sauce over warm noodles and toss to coat.
  6. Sprinkle with green onions and toss again.
