Organic Dairy-Free Tzatziki
Preheat oven to 400°; slice potatoes in half lengthwise, mix with 2 tbsp oil, salt/pep + fave spices, then spread on a sheet pan cut side down; roast 25-30 min until tender
Meanwhile, toss broccoli with 1 tbsp oil + salt/pep; add to one side of another sheet pan
Season 4 fillets of salmon with salt/pep + oil, then spread 2 tbsp tzatziki onto each fillet; place fish on the other side of the sheet pan + bake 10-12 min til fish is cooked through + broccoli is tender
Divide all to plates; garnish with chopped parsley + serve each with extra tzatziki drizzled on top.
