Goat Cheese Log, Herbed
Roughly chop artichokes and roasted red peppers.
Divide the cheese log between the 3 sandwiches, spreading onto bottom bun; drizzle 1 tbsp oil, 2 tsp vinegar + salt/pep to the other side of bun
Layer on artichokes, peppers + a small handful of spinach to each
