Cheesy Bean + Rice Stuffed Poblano Peppers



Green Chile sauce
Shredded Mozzarella Cheese
Simmered Cuban Black Beans
Seasoned Jasmine Rice OR Spanish Rice
Poblano Peppers 2 Pack

Preheat oven to 400°

In a medium bowl, mix together beans (discarding some liquid) + rice or Spanish Rice

Wash + dry 1½ packages of poblanos, slice in half lengthwise + discard seeds; divide rice + bean filling to peppers, place in a baking dish, pour over ⅞ of a package of green chile, sprinkle on ¼ of a package of cheese to peppers + cover with foil; roast in oven 15-20 min then remove foil + roast 15 min more until hot + bubbling
